What to do with leftover Orange Peels
Did you stock up on oranges to boost your Vitamin C intake? Do not throw away the peels!
With orange peels, you can cook a quick jam to spread on your toast, a cup of plain yogurt or as a topping for your cheesecake.
How do I do it?
Ingredients
2 kg of oranges
2 l of water
Juice of 2 lemons
2 kg of raw cane sugar
Instructions
Rinse thoroughly the oranges peels under running water. Squeeze any leftover juice and collect it in a jar. Remove the white skin remained inside and cut the zest into thin strips. Pour the orange juice in a large bowl with the zests strips.
Add 2 liters of water and let it stand overnight.
Then, transfer the content of the large bowl in a large pot and bring to the boil. Let it simmer, covered on low flame for about 1 hour and a half, make sure the zests become soft.
Finally, add the lemon juice, the sugar and stir with a wooden spoon to melt. Bring it back to the boil and let it simmer for at another 40 minutes.
When it's ready, transfer the jam into a sterilized jar.
